Ingredients

check cold mashed sweet potatoes 3 cups cold mashed sweet potatoes

check milk 1/3 cup milk

check brown sugar 1/4 cup brown sugar

check butter, melted 1/4 cup butter, melted

check egg 1 egg

check vanilla extract 1 teaspoon vanilla extract

check salt 1/4 teaspoon salt

Topping:

check brown sugar 1/3 cup brown sugar

check chopped pecans 1/3 cup chopped pecans

check flour 3 Tablespoons flour

check butter, melted 3 Tablespoons butter, melted

Directions:

Preheat oven to 350 degrees F

Spray six ramekins or oven proof individual serving dishes with nonstick cooking spray.

In a large bowl, mash the sweet potatoes, milk, brown sugar, butter, egg, vanilla and salt until fluffy. Divide the mixture among servings dishes.

Combine 1/3 cup brown sugar, pecans, flour and 3 tablespoons melted butter until blended; sprinkle over the top of sweet potato mixture.

Bake uncovered for 25 to 30 minutes or until golden.
