Cajun Sausage and Beans for Two

Ingredients

Add smoked turkey sausage, cut into 1/4-inch slices to shopping list 1/2 lb. smoked turkey sausage, cut into 1/4-inch slices

Add (15 oz.) black beans, rinsed and drained to shopping list 1 can (15 oz.) black beans, rinsed and drained

Add (14-1/2 oz.) diced tomatoes with garlic and onions to shopping list 1/2 can (14-1/2 oz.) diced tomatoes with garlic and onions

Add medium green bell pepper, chopped to shopping list 1/2 medium green bell pepper, chopped

Add Cajun seasoning to shopping list 1 teaspoon Cajun seasoning

Add cayenne pepper (optional) to shopping list 1/8 teaspoon cayenne pepper (optional)

Directions:

Preheat oven to 450 degrees or grill to medium-high. Combine sausage, beans, tomatoes, green pepper and seasonings.

Center half of mixture on 12-by 18-inch sheet of heavy-duty aluminum foil.

Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make another packet.

Bake 18-20 minutes on a cookie sheet in oven or grill 12-14 minutes in covered grill.
