Mint Chip Ice Cream

Yield: Makes about 2 quarts.

Ingredients

Add eggs to shopping list 3 eggs

Add sugar to shopping list 1 1/2 cups sugar

Add (13-oz.) Pet Evaporated Milk to shopping list 2 cans (13-oz.) Pet Evaporated Milk

Add peppermint extract to shopping list 3/4 teaspoon peppermint extract

Add green food coloring to shopping list 1/8 teaspoon green food coloring

Add (6-oz.) grated milk chocolate to shopping list 1 1/2 cups (6-oz.) grated milk chocolate

Directions:

Beat eggs and sugar in large mixing bowl until well blended. Stir in evaporated milk, peppermint extract and food colring. Gently stir in grated chocolate. Refrigerate until well chilled. Pour into ice cream freezer container. Churn and freeze according to manufacturer's directions.
